VIA CARITATIS ABBAYES BLANC "SILENTIUM TIBI LAUS" 2019

Medium-bodied yet weightless, carried by vibrant acidity. Not heavy, not lean. Ripe apricot and apple glazed with honey—a tribute to the sun-drenched 2019 vintage. lemon curd and toasted brioche, salted almonds and limestone minerality tighten the frame, while a briny undercurrent pulls like a tide.

Open now for vibrancy. Pair with monkfish seared in olive oil with fennel, or a saffron risotto dusted with truffle. The wine’s salinity cuts richness while embracing herbs.

Crafted by Philippe Cambie from rediscovered vineyards tended by Cistercian monks, this wine channels centuries of contemplative devotion. Clairette (60%) and Roussanne (40%) vines, rooted in limestone-clay soils near abbeys like Le Barroux, yield grapes imbued with austerity and grace. Fermented wild in concrete eggs and aged sur lie, it emerges as liquid alchemy.
