TASTING NOTE: Its deep ruby colour
matches the aromas of red and black fruits. Rich on the palate, it’s perfectly
balanced by a nice freshness and fine tannins.
FOOD PAIRING: This full-bodied, yet
refreshing, fruity wine is a perfect match for red fruit or chocolate desserts.
This seductive style of Grenache pairs well with sweet and savoury dishes.
TERROIR AND VINE MANAGEMENT: Vineyard farmed 100%
biodynamically. From a plot composed with stony topsoil over shale bedrock in
the Deveze area. Shallow soils, with bedrock only 60–80 cm below surface.
Southern exposure. Soils are ploughed and compost is applied between the rows.
Age of the vines: 15 to 35 years. Average yield: 18 hectolitres per hectare
with a density of 3 500 to 4 000 vines per hectare.
GRAPE
VARIETIES: 100% Grenache.
HARVEST: Manual, between the last week of September and the second week of
October. The bunches sorted twice manually on a belt and vibrating table. The
fruit de-stemmed and slightly
crushed. Potential alcohol content 15 to 18 %.
WINEMAKING: Made in temperature-controlled concrete vats and stainless-steel vats.
Alcoholic fermentation at 25° C. Halfway through, a spirit is added (mutage)
directly on the fermenting must, the wine is left to macerate on the skins for
15-20 days.
MATURATION
AND BOTTLING: In a reductive environment
in a regularly topped up tank for 10 months, then bottled.
